What are the connection requirements for extending wire runs? Can a wire nut be used or is a box required? What guage wire is required?

Sure, you can use small wirenuts to make the connections on your puck lights.  I would use a 16 or 14 gauge wire if you have it.  Terminating in a box is always a good idea, but since this is a 12 volt system, that is not required.
