I want to light a 160'w X 280'L roping arena (at home). What do you suggest for placement and number of lights? I was thinking 4 (400w) on each side and one at the roping box end. Also, would 100 amp service be enough?

You will need six poles with twelve lights with forward throw optics to properly illuminate this size arena.  You will be better off using 1000-watt fixtures and spacing the 25' to 30' poles roughly 70' on center.  I know that sounds like a lot of lights, but you have a big arena and a lot of area to cover.

The 100-amp panel you have is more than adequate to handle 12,000 watts of light.  If you hook them up at 220-volts that is only 55-amps of load total.  So, if you hook up two poles per circuit, that is only three 20-amp double pole circuits.
