How do I know which length Xenon undercabinet light fixture(s) to order for my kitchen? What about the corner with an angled corner cabinet? Do I need a hardwire box for the hardwire fixtures? If so, do I need one for each fixture or just one for each group?

The main goal for good task lighting is to try for uniform light distribution on the work surface.  So, you try and use the largest XENON LIGHT FIXTURES you can to fit the cabinets.  We have link cables to connect the fixtures form one to the other for retrofit applications.  If you are starting from scratch, I would consider using the hard wire fixtures.
