I have an application that calls for a closet door switch. There are two hinged doors on the jamb. I need a switch(s) that work if only one or the other door is open...like a three way switch?

All of our 120 volt Edwards door jamb switches are single pole devices.  To accomplish your goals, you simply need two switches connected to the same hot wire.  That way when one or the other door is opened, the lights will turn on.

If you use the Edwards 44 low voltage switch (puch to open) in conjunction with a small transformer and lighting contactor, you can have multiple switches controlling one light source.
