My electrician told me to run 2 cables in my trench in order to light up 3 trees...the farthest is about 100 ft from the transformer. Why? Is it because of the distance being run? He said something about "looping the run."

Yes, He is telling you good information.  By running two cables you can set up a continuous loop system.  This will help you maintain proper voltage from the transformer to the fixtures.
